If an apple a day keeps the doctor away, imagine what a good ol’ bowl of comforting apple curry can do for your health! 😋 I’ve been experimenting with vegan curries these past few months and this Green Apple Curry, surprisingly, has been one of my favourites.
I made this recipe for my dear friend Danny, founder of Veahero aka THE BEST meal planning platform for vegans and vegetarians. I love e.v.e.r.y.t.h.i.n.g. about this platform. Veahero was started by a group of friends who decided to transition to predominantly plant-based lifestyles in the last couple of years, and in doing so became passionate about helping likeminded people make an easy and informed transition to a meat-free lifestyle. Four reasons why you should check it out:
1) The platform is 100% free.
2) It comes complete with a drag and drop meal planner…
3) …and a shopping list generator!
4) There are currently 600+ delicious recipes to choose from, and if you wander on over to the ‘featured cooks’ section you might just find a few of my recipes waiting there for you to try them out 😉
Veahero is also the reason why I’ve been so quiet lately – in addition to cooking up a storm for the website, I’ve been helping out behind the scenes with a few launch and social media elements. It’s been an amazing experience so far and the journey is just starting. You can help spread the word by following along on Instagram, Facebook, Twitter and Pinterest; and by telling friends and family about this amazing tool – vegan and vegetarian meal planning has never been this easy!
Now back to my apple curry…
This sweet and spicy beauty is super easy to make with ingredients that should already be in your pantry. The spice combination is a twist on a traditional Sri Lankan curry powder mix, which gets toasted to develop a deep, earthy flavour, and works beautifully with the sweet and tart taste of green apples. I like my curries spicy, but you can easily halve the spices for a milder taste.
I hope you enjoy this recipe! If you try it out, let me know by posting a photo on Instagram with the hashtag #afabledlife, I would love to see your creations – and be sure to add this recipe to your very own Veahero meal plan.
Have a delicious day! x

1/8 tsp Ground Cloves
1/8 tsp Turmeric
