If an apple a day keeps the doctor away, imagine what a good ol’ bowl of comforting apple curry can do for your health! 😋 I’ve been experimenting with vegan curries these past few months and this Green Apple Curry, surprisingly, has been one of my favourites.
This sweet and spicy beauty is super easy to make with ingredients that should already be in your pantry. The spice combination is a twist on a traditional Sri Lankan curry powder mix, which gets toasted to develop a deep, earthy flavour, and works beautifully with the sweet and tart taste of green apples. I like my curries spicy, but you can easily halve the spices for a milder taste.

Green Apple Curry
Prep Time: 10min
Cooking Time: 25min
1 Yellow Onion
2 Granny Smith Apples
2 tbsp Olive Oil
1 clove Garlic
1 tsp Mustard Seeds
1 tsp Coriander Seeds
1/2 tsp Ground Cumin
1/8 tsp Ground Cloves
1/8 tsp Turmeric
1/2 tsp Chilli Flakes
2 Bay Leaves
1 tbsp Coconut Sugar
1/4 cup Light Coconut Milk
1/3 cup Water
Slice onions, and cut apples into eigths and remove seeds (leave skin intact).
Add sliced onion and minced garlic to a non-stick pan over medium heat and sautee until onions start to soften.
Add bay leaves, spices and chilli flakes, stir to incorporate, allowing spices to toast, and flavours to develop for 2min.
Add apple slices, sugar and salt, and coat apples with spices. Cook for 10min, uncovered.
Add water and coconut milk, stir through and cook for 10min, covered, adding and stirring through an additional tbsp of water at a time if necessary.
Serve curry with grains of choice.
Notes: Spices can be halved for a milder taste
