What are your favourite rainy day essentials? Mine are wooly blankets, a good novel or two, and a big bowl of comforting porridge. Just call me Goldilocks.
Specifically, polenta porridge has become my go-to comfort food breakfast of choice, and this particular recipe is a breakfast game changer. It’s incredibly simple to make – 6 ingredients and 15 minutes is all you need to reach porridge perfection.
There are many many ways to cook polenta porridge and mine might not be considered the ‘proper’ way, but it’s my favourite way because it requires minimal effort and it’s ready in a flash! 🙂
My polenta porridge with maple roasted figs is:
- insanely creamy

Polenta Porridge with Maple Roasted Figs
Prep Time: 5
Cooking Time: 15
1/4 cup Maple Syrup
400ml Almond Milk
pinch Himalayan Salt
1 tsp Vanilla Extract
2 tsp Cacao Nibs (optional)
2 tsp Hemp Seeds (optional)
Preheat oven to 180ºC.
Slice figs in half, brush with maple syrup and roast in the oven for 10 to 15min until red and juicy and set aside.
In the meantime, add almond milk, vanilla extract, 2 tbsp maple syrup and a pinch of salt to a small saucepan over medium-high heat.
Add polenta to saucepan and stir until polenta is thick and creamy.
Divide porridge between two bowls, top with figs and optional cacao nibs and hemp seeds.
