Some days life hands you Pinterest fails. Other days, life hands you Dragon Fruit Salad by The Alkaline Sisters. Those days are the best days.
I fell in love with this beauty of a recipe on Pinterest a few months ago, and as fate would have it, I spotted a lonesome dragon fruit in the fruit aisle a couple of days later – that was my cue to try this recipe out, and boy am I glad I did!
This salad combines all of my favourite things: dragon fruit, avocado, pomegranate and aaall the microgreens. It’s fresh, it’s sweet, and it’s almost too pretty to eat! You know what else it is? Healthy. The healthiest, in fact, due to the dragon fruit’s alkalizing minerals, antioxidants and low sugar content. Don’t even get me started on the creamy mint dressing…perfection!
This dragon fruit salad is vegan, nutrient-rich, perfectly sweet, rich in alkaline foods, and so easy to make.
The original recipe is a masterpiece, I just added spring onion and micro greens for a bit of a punch and extra colour, and I added extra agave syrup to the dressing because sweet tooth 😬

Dragon Fruit Salad with Avocado Mint Dressing
Prep Time: 15min
2 cups Mixed Greens
1 Dragon Fruit
1/3 cup Pomegranate Seeds
1/2 cup Raw Macadamia Nuts
1/4 cup Micro Greens
1/4 cup Olive Oil
1/4 cup Fresh Mint
1 tbsp Agave Syrup
pinch Sea Salt
1/4 cup Filtered Water
Divide mixed greens between two bowls, top with sliced dragon fruit, sliced avocado, macadamia nuts and pomegranate seeds, and garnish with micro greens.
Place remaining ingredients in a blender (NutriBullet works great!) and combine until pureed. TIP: Add water 1 tsp at a time to get the dressing to a pourable consistency.
Serve salad immediately with dressing on the side.
