Hi, remember me? The girl who promised to share her go-to avocado toast recipe with you? The same girl who had every intention of sharing weekly recipes here on A Fabled Life; the same girl who in the past month had to adult harder than she had ever adulted before. Life, lemons, lemonade, right? 😉
You’ll be happy to know that I still managed to find time to try out a few new recipes in-between all of the adulting, and you’ll be even happier to know that I’m still crushing on avocado toast like it’s 2014 – and today is the day that I’m sharing my favourite avocado toast recipe with you.
Avocado Hummus Toast is the best thing since sliced bread, on sliced bread. It requires just a handful of ingredients, minimal effort and, best of all, Avocado Hummus sans Toast can be enjoyed as a dip, spread or topping with just about anything.
Before I share the recipe with you, allow me to share a little known fact about avocados. Raise your hands if, despite the best of intentions, you have ever sliced into an avocado before it was ready to eat (I’m raising my hand). Now raise your hand if you threw that avocado away, unused, accompanied by a tiny tear of sadness rolling down your cheek (I’m raising my hand). Now lower your hand and read these words of magic: Avocados continue to ripen when you put the sliced halves back together with the pit intact, wrap it tightly with clingfilm and place it in the fridge for a day or so. Now without further ado, allow me to introduce you to my longstanding food crush. This beauty is made with love, chickpeas and homemade tahini.

Avocado Hummus Toast with Homemade Tahini
Prep Time: 15min
1/2 cup Sesame Seeds
1/4 cup Olive Oil
1/8 tsp Sea Salt
1 clove Garlic
1 tbsp Lemon Juice
1/8 tsp Ground Cumin
2 slices of your favourite bread
Lightly toast sesame seeds in a pan over medium heat until golden (10 – 15min). Allow sesame seeds to cool completely, add to a blender and pulse until crumbly. Add 1 tbsp olive oil and blend until smooth, adding 1 tsp olive oil as needed until desired consistency has been reached.
Add chickpeas, olive oil, garlic, lemon juice and 1 tbsp homemade tahini to a blender and blend until smooth. Add avocado, cumin, salt and pepper and pulse until smooth and creamy.
Lightly toast two slices of bread. Spread avocado hummus on bread, sprinkle with nutritional yeast and seeds, season to taste and enjoy!
